I really love "La dance macabre",especially it's Specter of Torment version "Hidden by Night", and "High above the land".

One of the soundtrack that is one of my favourite has to be 'Strike the Earth!' from the first level 'Plains of Passage'.

I agree, this is one of the tracks (if not THE one) that usually first come to mind when thinking about Shovel Knight soundtrack.
